How to Make Perfect Tostones

Tostones are a staple in every Puerto Rican household — crispy, salty, golden discs of fried green plantain that pair with practically everything. The secret is in the double fry: once at a low temperature to cook through, then again at high heat for that shattering crunch.

Why Green Plantains Matter

You want your plantains green and firm — not yellow, not spotted. Green plantains are starchy and hold their shape when fried. Ripe plantains will fall apart and turn sweet, which is great for amarillos but not for tostones. If your plantains are slightly turning, you can still use them — just know they'll be a touch softer and sweeter.

Step-by-Step Instructions

Step 1 — Peel and slice. Cut the ends off each plantain, then score the skin lengthwise in 3-4 lines without cutting into the flesh. Pry the skin off under running water — it helps. Cut each plantain into 1-inch thick rounds.

Step 2 — First fry (low and slow). Heat about 2 inches of oil in a heavy pot to 325°F. Fry the plantain pieces in batches for 3-4 minutes, turning once, until they're lightly golden but not browned. Remove to a wire rack or paper towels.

Step 3 — Make the mojo soak. While they fry, mix the water, minced garlic, lime juice, salt, and pepper in a shallow bowl. This quick mojo soak is what separates good tostones from great ones — it seasons the plantain all the way through. Let the fried pieces sit in the mojo for about 2 minutes.

Step 4 — Smash them flat. Using a tostonera (plantain press), a meat mallet, or the flat bottom of a sturdy glass, press each piece to about 1/4-inch thickness. Work on a cutting board lined with a piece of plastic wrap or parchment to prevent sticking.

Step 5 — Second fry (hot and fast). Crank the oil up to 375°F. Fry the smashed plantains for 2-3 minutes per side until they're deep golden and audibly crispy. This high-heat fry is what gives tostones their signature crunch.

Step 6 — Season and serve. Drain on paper towels and hit them with a pinch of flaky salt while they're still hot. Serve immediately with mayo-ketchup (mayo + ketchup + a dash of garlic powder) or a garlic mojo dip.
